12 Week Self-Imposed Vegan Challenge: Week 1 Day 5

Woe is me. I’m feeling ROUGH. I keep racking my brain trying to figure out why I feel this way because I am actually confused. Last night I got ample sleep, I’ve been eating consistent and nutrient packed meals. Is there some adjustment period to being strict vegan? I don’t know, I’ve got top men working on it.

Immediately after running 8 miles run today I started feeling almost sick. I thought I was supposed to turn into a super athlete immediately. What the heck?!

Maybe I feel so horrible because I have also been trying to lose weight with WW. Their program works and gives me a lot of freedom from tracking…but sometimes I don’t know if I am eating enough for the amount of calories I am burning. I don’t know, I’ll survive. Don’t you worry about me!

The official Vegan slogan for the day is: “Veganism: Bring your salt…like all your salt…because you need to salt your food until it tastes like only salt and then it’s delicious…and by delicious I mean edible.”

Here is what I ate:

Breakfast: (8 points)

3/4 cup (measured uncooked) old fashioned oats, cooked in water. I added 1/2 cup of homemade almond milk (1 pt?) and 5 tsp brown sugar at the end. It was so good!

Lunch: (29 points)

Calm down, it was only so high because I was celebrating a friend’s birthday. 2 servings Easy Veggie Enchiladas (10 pts) 1 Chocolate Mug Cake (9 pts) that is usually so good, I used to eat it non-vegan. Today I over-salted and overcooked it…then ate it anyway. haha!. 1 So Delicious Salted Caramel Chocolate Dipped Ice Cream Bar (10 points). Did I have you at salted caramel? That sucker is so good I have my anti-vegan friends buying them.

Afternoon Snack: (5 points)

1/4 cup Emerald Cocoa Almonds (5 pts). I was freezing from the run and had to pick up the kids. My stomach was feeling off and that was the only thing there that sounded good. I hoped they were vegan, they were. However, they were processed and had fake sugar on them. Whoops.

Dinner: (5 pts)

When I am sick I want junk. Feeling frustrated from feeling terrible, I had a mini fall-off the wagon and ate 2 sheets of graham crackers (4 pts) marshmallow (1 pt).
Then I pulled myself back together and had a banana and an apple with 3 cups of water. Maybe I was dehydrated because I am feeling better now.

Here is my exercise log for today:

7,000 steps (5 points)
80 minutes of medium intensity running (23 points)
28 points earned total

WW Stats

Daily used: 47
Weeklies remaining: 1

On to day 6, I can’t believe I’m still alive after 6 days of this. Barely alive, but alive nonetheless.
