Delicious Carrot Cake Overnight Oats

I don’t consider myself a food blogger, but I always end up sharing recipes with you anyway. Why? Because there is a need for tasty, weight-loss friendly recipes! Usually my best friend creates something so insanely delicious that I feel it’s my duty to share it with the rest of the world. Case in point, allow me to introduce you to – drumroll, please – Delicious Carrot Cake Overnight Oats!

This recipe was born after my friend and I scoured the internet for the perfect carrot cake overnight oats recipe. After reviewing multiple recipes, we concluded they were all lacking. So we took the best bits from a few different recipes, and tweaked them just right. The result? An absolutely amazing, healthy, cake-for-breakfast-esque concoction that I cannot get enough of!

These Are Crazy Good Overnight Oats

Until now, I would never have described overnight oats as “crazy good.” I mean, I’ve always been a fan of overnight oats, in general. But they usually promise to taste like “cookie dough” or “brownie batter,” and they don’t. They taste like cold, soggy, faintly flavored oats. I’ll still eat and enjoy them, because I just figured, “eh, it’s healthy.” But I’m not running around, bragging about them and begging my friends to try them.

That’s what separates this overnight oats recipe from the rest. I’m begging you to try it. No, it’s obviously not going to taste exactly like a moist slice of carrot cake with thick cream cheese icing – please lower your expectations. But it will hit the spot and subdue your carrot cake cravings!

THE CREAM CHEESE TAKES IT TO THE NEXT LEVEL

That’s because the flavors in these oats are, in fact, reminiscent of a piece of carrot cake.  The secret in this sauce comes from the teensiest  amount of cream cheese. Seriously, you will wonder how you can even taste it at all. Not too much, not too little. Simply perfection.

Don’t believe me? Try it for yourself! It’s a delicious, healthy start to your day. Chock full of good fats, fiber, and even vegetables, these oats will fuel your body and mind in all the right ways first thing in the morning. You can’t beat that guarantee!

Carrot-Cake Overnight Oats

Serves 2 

INGREDIENTS

1.5 cup almond milk (or milk of choice)
1 tsp vanilla extract
1 tbsp cream cheese (full fat, light, or fat free. I use full fat because it’s delicious, obviously)
1-2 tbsp 100% pure maple syrup (depending on desired sweetness)
1 cup old fashioned oats
½ cup packed grated carrot
2 tbsp raisins (I used golden)
2 tbsp chopped walnuts
2 tsp cinnamon
Pinch of nutmeg
Pinch of allspice
Pinch of salt

DIRECTIONS

  1. In a mediumsized microwavable bowl, warm up the cream cheese in the microwave for 10 seconds.
  2. Whisk together the milk and warmed cream cheese
  3. Add maple syrup and vanilla to the milk and cream cheese and stir until combined.
  4. Add the remaining ingredients to the wet mixture, and stir well.
  5. Divide the oats evenly between two airtight containers with lids. I use these.
  6. Refrigerate the jars overnight.
  7. In the morning (or up to a few days later), uncover and enjoy..

Top with extra walnuts or syrup, if desired!

Nutrition facts are based on using a 60 calorie/cup almond milk, full fat cream cheese, and 1 tbsp of pure maple syrup.
Per serving: 310 calories, 7.1g fiber

To be perfectly honest, I’ve never found overnight oats, or oats in general, to be particularly filling. So I boost the oats with chia seeds and a bit more almond milk. This makes a larger portion, and the chia seeds have amazing staying power. Doing this keeps me full for hours.

A Note About Nutrition

As far as counting and tracking goes, I currently focus only on calories and fiber. If you add the chia seeds, it brings the fiber in this dish to 12 grams. That is almost half your daily intake suggestion of fiber. Protein is known to help with satiety, but fiber plays a big role here, as well. Unfortunately, it is oftentimes neglected. I strongly recommend pumping up your oats with chia seeds. FYI, the extra milk will take the intense flavor down a notch, but it is still amazing!

A Whole Week of Overnight Oats

HEALTHY COOKIE DOUGH OVERNIGHT OATS

This one was really good but, ya know, it’s not cookie dough. Hahaha. It’s a bit calorie heavy, but at least it’s filling. It’s the chia seeds, I’m telling you! I don’t suggest substituting the cashew butter with another nut butter. Cashew butter provides the most like cookie dough flavor.

BROWNIE BATTER OVERNIGHT OATS

I will make these again, but mine are always really runny. Meaning they look nothing like the photo. Add less milk if you want a thicker texture. The flavor tasted great…not really reminiscent of what it says it is…but good nonetheless.

Overnight Cake Batter Protein Oats

These are amazing! It’s not exactly like licking the beaters, but it’s pretty darn close! The secret to the flavor here is that butter extract. If you don’t have butter extract, don’t attempt to make these. You’ll only be disappointed. Buy some, then make these. And whatever you do, don’t omit the sprinkles. That wouldn’t be as much fun.

Almond Joy Overnight Oats 

I give these 2 thumbs up! Almond Joy candy bars are delicious, and this overnight oats recipe is chocolatey, coconutty perfection. I plan to make them again very soon, simple as that.

These 4 tried-and-true overnight oats recipes, combined with my delicious carrot cake oats, will get you through a whole week of busy weekday mornings. Enjoy a different variety of deliciousness upon waking each day without adding an ounce of stress to your morning routine! To round out a full 7 days, here are two more recipes that look amazing. These might sound strange because Earl Gray is tea. But have you ever had a London Fog? I love them! If you do, too, then you understand why I want to make these oats. Next time you are at a coffee shop, do yourself a favor and look for London Fog on the menu. Order one if they have it, and thank me later.

Easy Spiced Chai Overnight Oats

Chai or chia? Who cares because they’re both amazing! And this recipe has ‘em both!  What’s not to like? If you like chai spiced anything, then I’m willing to bet you’ll enjoy these overnight oats.

Now you have a whole week of non-stop overnight oats fun! If you are wanting to eat healthier, overnight oats is an easy way to start. Having them ready-made in the fridge takes the guesswork out of breakfast. The only dish I need to dirty in the morning is the spoon I use to eat it!

Grabbing the jar from the fridge is faster, healthier, and less expensive than going through a fast food drive through. They can be eaten at home, or they are easily portable for on-the-go. And they are delicious to boot…what’s not to love?!
