Mom’s Calorie Friendly Chicken and Artichoke White Pizza Recipe

I like descriptive titles for these recipes so you know what to expect, this is a white pizza recipe that is topped with chicken and artichokes. But this pizza is actually called “Mom’s Polar Bear Pizza.” Funnily enough, my mom created this recipe, so that’s what I’ve always called it. In case you are new here, I find this funny because I refer to myself as “Mom” on this blog – MomGrowsUp – but this is my Mom’s pizza recipe…are you following? 

Actually, my parents co-created this recipe after eating pizza at a restaurant while on vacation. They were so inspired they went right to work replicating it as soon as they came home. The result was perfection, and it’s my favorite pizza of all time. And I fancy myself a pizza connoisseur, so that’s saying something. I used to request it regularly, until I started making it myself. 

Here’s what you will find in this white pizza recipe aka “Mom’s Polar Bear Pizza”: olive oil, oregano, garlic, sun dried tomatoes, artichokes, chicken breast, spinach, green olives, basil, and obviously mozzarella cheese. Are you dying for the recipe yet? You should be.

Crust

Before we begin, a pizza is only as good as its crust. We never eat pre-made crust in my house, I’m pretentious like that. My mom always used to make pizza crust using The Pioneer Woman’s recipe, and it’s good and fairly easy to make. We have both since moved on to making sourdough pizza crust (which is bomb), but I understand not everyone can do that due to not having a sourdough starter on hand.

I have scaled this recipe down, however, to a more manageable, single serving, to make it easier to track the calories precisely.

Why is this white pizza recipe for a small pizza?

I started making my own, single-serving pizzas because I’m a calorie tracker. It’s more accurate to track my calories by making myself an individual pizza, rather than making one big pizza and serving myself slices cut from it.

I do this so I am 100% certain I am getting every last calorie, crumb, shred, and morsel of pizza I am due. Forbid it that I  would – *GASP* –  under eat when pizza is involved. And if I’m being completely honest, I have very little self control around pizza. Even when I try to be well behaved and log the restaurant ones, I’m always searching for the biggest slices in the box to eat – you know you do it too!

Oftentimes, homemade pizza can bring its own set of challenges. It is not perfectly circular, has thicker or thinner crust in certain spots, and the toppings and cheese may not be evenly spaced. There’s just no way to cut slices in a way to guarantee even proportions. I want to eat ALL the calories I log – no more, no less – so that’s why I make myself an entire pizza.

WW’s magical 2-ingredient dough

Besides helping me lose 40 pounds, and keep it off (back in the day before I switched to calorie-counting), WW served a far more significant role in my life. It introduced me to “2- ingredient dough.” I got hooked on 2-ingredient dough, and now use this recipe almost exclusively for all my pizza crusts.

It’s just so easy to make, and I appreciate the extra boost of protein the Greek yogurt provides. Let me tell ya, that miracle 2-ingredient dough makes a fine pizza. My love for pizza runs deep, yet I am not blinded by it – I am discerning and selective when it comes to my pizza needs.  You can trust me. This dough works.

Crust making must haves

Food Scale – measuring cups are for chumps…yes, I use it in the written recipe below, but I actually use the bag of flour to find out how many grams of flour equals 1/2 a cup and use the scale instead. I do the same with the yogurt. I want all my calories- no yogurt left in the measuring cup for me.
Pasty Roller – I’m not kidding, this thing changed my pizza making life. It’s just so much easier to roll out my personal pizza with this zippy little guy.
Silpat Mat – Again, I use this thing all the time. From oven fries all the way to cookies, with a pizza between. I’m in love with the silicone mat.

The White pizza recipe

As with all my recipes, the amounts listed are just suggestions. You know how to make a pizza, and can tell by looking if it needs more toppings here or there. However, this is how I typically prepare it for myself. Feel free to add more or less to satisfy your own nutrition and calorie goals.

As written below, this recipe will serve 1 hungry person. I suppose it could be shared by 2 people wasting away in misery on a calorie restrictive diet (aka – NOT one of Mom’s Kids or someone using my weight loss program. We are pro high calories and full tummies in our pursuit of weight loss!). But I hope and pray you eat it all by yourself.

So without further adieu, here is the much-anticipated recipe. As always, I have no plans to be a food blogger. Please keep that in mind as you attempt to make sense of my explanation below. I see it as my duty to share perfect, life changing, weight loss supporting recipes with the world.

The world must not be denied Mom’s delicious Polar Bear Pizza, no matter how convoluted and difficult to follow the instructions may be. Not on my watch.

This pizza is worth the work

Not only are the calorie and protein stats great and diet-friendly, but this pizza is absolutely delicious and super filling. If you are into macros, you could definitely get the fat down by using a low fat cheese.

If you want a lighter calorie pizza, you could scale down the crust recipe to make a smaller pizza. This would also cause you to use and need fewer toppings and less cheese. You could easily get this recipe down to 500 calories if you wanted to.
