Calorie-Friendly Taco Pizza

I love pizza. By now, surely this is clear. That’s why I had to create a calorie friendly taco pizza, because you know what else I love? Being in shape, clothes fitting right, not feeling like a stuffed sausage…all things I used to struggle with because of my undying love for pizza. Not just pizza, but alllllll the foods. Up until this point, in all the years I tried to lose weight, eating “healthy” was a sacrifice that just wasn’t ever worth it to me.

Even overweight, I could still run, and I was still semi-fit. Plus, even my blood work was absurdly healthy. I was happy and feeling good, albeit uncomfortably fluffy – why screw it up by subjecting myself to eating depressingly small amounts of tasteless, cardboardy, diet food in order to lose weight? Eating food like that would inevitably drive me right into the comforting arms of all my true loves – pizza, candy, nachos, and brownies- anyway. I knew the reality of the restrict-binge cycle all too well.

Then one fateful day, something magical happened..

I realized I could have it all. The trajectory of my weight loss journey and life completely changed when I realized I didn’t have to give up my favorite foods in the name of weight loss. Rather, I could enjoy all of the delicious foods that I love, AND successfully lose weight. This allowed me to break the restrict-binge cycle, and I lost 20+ pounds! (I created this planner and support group so you could follow suit!) 

I realized with a few “healthy” swaps and tweaks, practically any recipe can become “diet-friendly” and still taste fantastic. When I realized I could eat all the yummy things and still lose weight, my first order of business was to recreate all my favorite specialty pizzas to be weight loss conscious. I’m something of a pizza snob, so I’ve perfected my recipes and process to ensure I’m eating nothing but the best. And now I’m passing this gift on to you. Christmas just came early. 

The crust

First, I focused my attention on the foundation of any pizza – the crust. Such an important component, and it can make or break your pizza.

“2- ingredient dough”

I use “2-ingredient dough” almost exclusively for all my pizza crusts. It’s just so easy to make, and I appreciate the extra boost of protein the Greek yogurt provides. Let me tell ya, that miracle 2-ingredient dough makes a fine pizza. This dough works.

2 Ingredient CRUST MAKING MUST HAVES

Food Scale – I use cups in the written recipe below, but I actually use the bag of flour to find out how many grams of flour equals 1/2 a cup and use the scale instead. I do the same with the yogurt. Doing this creates less dishes and is more accurate. Win-win.
Pasty Roller – I’m not kidding, this thing changed my life. I use it for everything I used to use a roller for.
Silpat Mat – This is one of my favorite kitchen items. From oven fries all the way to cookies, with a pizza between. I’m in love with the silicone mat.

A Note About “Calorie-Friendly”

Please note, I didn’t say “diet” pizza. There’s a difference between “calorie-friendly” and “diet”, and I assure you the former blows the pants off the latter! No impossible-to-melt fat free cheese or bland, burnt wraps claiming to be crusts here! 

The only thing no-fat used in this pizza is the Greek yogurt cleverly hidden in the crust. Yet these pizzas clock in at a mere 500-700 calories…FOR THE ENTIRE PIZZA, mind you, not per slice.

My pizzas are so satisfying YOU WILL NOT MISS THE OLD PIZZA. Yes, the old pizza is good, there’s no denying that. But devouring delicious pizza while also losing weight… that wins every. single. time. If you’re still skeptical, at least give it a try – what have you got to lose? These pizzas are GOOD. I promise. Now, onto the newest pizza in my recipe vault: Calorie-Friendly Taco Pizza.

What Inspired This Pizza?

I’m not too good to admit: this pizza was inspired by a pizza from a gas station. Here in the Midwest, we have Casey’s gas stations, and they also serve pizza. Don’t let the gas station part fool you – these people are proud of their pizza. Their taco pizza is a 16 dollar investment and worth every penny. But I won’t lie, I don’t feel great after eating slice after 500-calorie slice.

The problem is, if I stopped at 1 slice I’d still be hungry because it’s just not enough food to make a satisfying meal. I need to see my pizza piled up and overflowing the edges of the plate to feel like maybe, just maybe, it’s enough. Plus, this homemade pizza is made with better quality ingredients, so when I finish eating it, I’m full, satisfied, and not feeling gross at all!
