Mom’s Burst Tomato Balsamic Lentil Pasta

I’m jokingly calling it “Mom’s” (because, ya know, Mom Grows Up) it’s actually a recipe my best friend made up, but she never wrote down how to make it, so I’m doing it now for you. It’s delicious, you need to make it.

I have no idea how to write a recipe, but this pasta cannot really be screwed up. It’s so delicious that it must be shared, so I’ll do my best to create a recipe that makes sense. I’ll tell you what’s in it with recommended amounts, and then you make it to taste. It’s a fresh dish that I have made about 25 times since first having it in May. I love it. Here goes nothing:
