Self-Imposed 12 Week Vegan Challenge: Week 1 Day 1

I explain what I am doing in this Youtube video because I don’t want to type it out: (Warning: I’m filming this on my IPhone and it’s a little hard to watch. But if I sit and wait for things to be perfect, they never get done!)

Basically I am going to document my body’s reaction to Whole-Food Plant Based living over the course of 12 weeks to see if there is any truth to the documentaries. This entire food journey will be logged with Weight Watchers (WW) because I am still trying to lose weight. I will keep a food log with points here, and talk about how I feel on youtube. Even if you don’t do WW, these posts will be informative about what I eat as a WFPB runner/PWR mom who is trying to lose weight.Here is my food log for today with the point break down:

Here is what I ate today:

Monday – October 21

I decided to start my 12 week challenge on a bit of a whim. While I had been planning to do this challenge for a few weeks now, I had also planned to start Tuesday…not Monday. My meals were planned, but the groceries were not purchased, so I had to do a lot of pantry digging and bread baking to have a Whole-Foods Plant Based day.

Today I baked two loaves of spelt flour bread for the week ahead from this cookbook. One of them turned out perfect, and the other one was a flop. I’m sure I did something wrong…it tastes good, though so I ate it. That cookbook was the cheapest cookbook I have ever bought, and I have not been disappointed. If you are confused on how to incorporate a larger variety of grains into your diet, the Ancient Grains cookbook would be a good investment.

I also made this Vegan Fruit and Veggie Everything Breakfast Loaf. When I tried to ditch meat and dairy the first time, breakfast was where I struggled. I just wanted something quick and tasty that wasn’t oats, so I made this to eat all week. Plus I’m always trying to sneak vegetables into my meals. This bread will be made again because even the kids loved it.

Breakfast (7 pts)

I had 3/4 of a left over Panera whole grain bagel leftover from yesterday, so I ate that while I was baking my breads. (7 pts)

Morning Snack (0 pts)

Green smoothie: 2 cups of spinach, 1 bag frozen mango, 1 frozen banana, water. I split it 4 ways with the kids (0 pts)

Lunch (15 pts)

The only thing I could scrounge up was 2 Joseph’s Pitas (3 pts) and Red Pepper Hummus (4 pts). Then I ate half a piece of the Vegan Fruit and Veggie Loaf (8 pts) I baked.

Afternoon Snack (16 pts)

1 Tablespoon of NuttZo Butter (3 pts), 1 Tsp Honey (1 pt), on a slice of bread I baked (4 pts). The other half of the Vegan Fruit and Veggie Loaf I baked (8 pts).

Dinner (10 pts)

I sent James to the store for 2 missing ingredients and then made this Vegan White Bean Soup with Potatoes (3 pts). It was really good and will be made again. I ate it with a the oat and spelt loaf (7 pts) I baked earlier.

Monday Conclusion

My day ended up totaling 48 daily points, which gives me a mere 10 weekly points for the next 6 days. I don’t worry about that because I exercise a lot so extra points are not hard to come by. I will try to not exceed more than 10 points over my daily allotment the next 6 days.

While I ate no processed food today, I did eat way too many grains. There were not enough greens in my diet, and I need more fruit. I’ll try to get a bigger variety of foods in my diet going forward. I won’t get to grocery shop until tomorrow evening, so we will see how everything pans out tomorrow. Wish me luck!
