Self-Imposed 12 Week Vegan Challenge: Week 1 Day 2

Today I came up with the official slogan for the Vegan Diet, “Veganism: You’ll live forever, but want to die the whole time!” It’s not fair to say that about Veganism, because they eat things like potato chips and breaded fake meat patties…I don’t eat that. I eat Whole-Food Plant Based, so processed food is out. And the joy is gone. I love junk food and the hooks go deep into my brain. It has a powerful hold on me, and I’m just beginning to shake free. It doesn’t come without misery though.

Here are my brief thoughts on it today:

Here’s what I ate today:

Breakfast: (15 points)

1 piece of Vegan Fruit and Veggie Everything Loaf (15 points), Big cup of black coffee, and a lot of water.

Morning Snack: (5 points)

1/4 cup cashews (5 points) and 1 banana with more water

Lunch: (12 points)

1 serving Vegan White Bean Soup with Potatoes (3 pts), Half a slice of Spelt Oat bread (3 points) from this cookbook, 1 pitted date (4 points) wrapped around 5 hazelnuts (1 point), and 1 grapefruit Spindrift

Afternoon Snack: (0 points)

Green smoothie: 1 frozen banana, 3 cups frozen spinach, 1/2 cup frozen kale, 1 bag frozen mango, 3/4 cup frozen pineapple, water

Dinner: (6 points)

Mom’s Balsamic Lentil Tomato Pasta: (6 points) I’m jokingly calling it “Mom’s” (because, ya know, Mom Grows Up) it’s actually a recipe my best friend made up, but she never wrote down how to make it, so I’m doing it now for you. It’s delicious, you need to make it.

7000 Steps: 5 points
Abdominal Training 40 min: 4 points
Weight Lifting 15 min: 3 points
Stationary Bicycling low intensity 20 min: 2 points
Stationary Bicycling medium intensity 25 min: 6 points
Total Activity Points Earned: 20 points
